Blueberry Muffins

Ingredients Unit Serve 30 Serve 50
Flour, self-raising kg 0.9 1.5
Sugar gms 450 750
Blueberries cups 3.6 6
Bran, unprocessed gms 180 300
Eggs nos 3 5
Milk mls 390 650
Oil gms 130 220

Method

  1. Set oven at 200°C.
  2. Mix flour and sugar in a bowl.
  3. Add blueberries and bran, fold in carefully.
  4. Add eggs, oil and milk, mix well.
  5. Spoon into patty pans or muffin tray.
  6. Bake for 15-20 minutes.
  7. Lift onto a cake cooler. Serve warm.
  8. Can also be made using a mini muffin tray.

 

DIETARY SUITABILITY
  Healthy Choices Reduce portion size.
  Vegetarian Diet Suitable for vegetarian diet.
  Fortified Spread with butter. Serve with a dollop of cream or custard.
  Gluten Free Replace self-raising flour with gluten free self-raising flour. Replace bran with gluten free rice bran.
  Diary Free Replace milk with soy milk or coconut milk.
  Pureed Suitable to be pureed.
