Ready for Spring! As we shake off the winter blues, it’s time to savour new-season lamb, gently poached in hot stock with baby carrots and a mix of broad and green beans.

Poached lamb with spring vegetables

|Carrot , baby, raw||kg||1|
|Turnip , white, fresh or frozen raw||kg||1|
|Potato , new, raw||kg||1.5|
|Onion , shallot, raw||Halved||g||260|
|Broccolini , fresh or frozen, boiled microwaved or steamed drained||kg||1|
|Bean , broad, fresh or frozen raw||g||560|
|Bean , green, fresh or frozen raw||g||450|
|Sauce , basil pesto, commercial||g||225|
- Place the stock in a large saucepan over medium-high heat. Season, bring to simmer, then add the carrot, turnip and potato. Cook for 6-8 mins until tender.
- Add the eschalots, broccolini, broad beans and green beans, then cook for a further 1-2 mins until tender. Remove vegetables with a slotted spoon and divide among serving bowls, mashing a little potato against the side of the pan, using a fork, to thicken the stock.
- Slice the lamb as thinly as possible then divide among the bowls. Pour over the hot stock (the stock will gently cook the lamb), drizzle with pesto, then serve.
