Sometimes the simplest things in life are the best. Many of our favourite comfort foods are simple and yet they occupy a greater place in our hearts than the finest gourmet cuisine. Recipes we see popping up on SoupedUp menus, time and time again are humble staples like fish and chips and sardines on toast.
In the spirit of keeping things simple, this #soupeduprecipe has no bells or whistles, in fact it only has a couple of steps.

|Sardine, Canned in oil, Undrained||g||300|
|Butter, Plain, Salted||g||120|
|Bread, From white flour, Commercial||g||300|
|Lemon, Raw||Juice and zest||ml||45|
|Pepper, Black or white, Ground||g||15|
- Warm sardines on a baking tray in moderate oven for 10-15 minutes.
- In a small bowl, combine olive oil from the canned sardines, lemon juice and zest, salt and pepper to taste.
- Toast bread and spread with butter.
- Top with warm sardines, a drizzle of marinade and serve with lemon wedges.
