Summer hasn’t quite left us yet but there’s a definite chill in the air. The perfect time to celebrate the mighty tomato, rich in vitamins and sun-kissed sweetness.

But what about a creative take on the humble tomato soup? Add a little heat and spice with curried croutons and a protein punch from lentils and – voila! – you’ve got a hearty, warming and delicious meal.

Adapts beautifully as a pureed soup for those on texture modified diets.

Tomato Lentil Soup with Curried Croutons

1. Heat butter in pan, add garlic, onions and carrots, cook, stirring, until onions are soft.

2. Add lentils, undrained crushed tomatoes, stock and water.

3. Simmer, covered, stirring occasionally, about 20 minutes or until lentils are tender. Serve with curried

Curried Croutons 

1. Remove crusts from bread, cut each slice into 8 triangles

2. Brush bread with combined oil and curry powder.

3. Place triangles on oven tray in single layer, bake, uncovered in moderately hot oven about 10 minutes till crisp.
